I have covered in my earlier post on my adventures with Jackfruit balls (chakka unda) and chips.
Here’s the virgin variety of chakka undas. Usually jaggery is added to undas for making them sweeter and also for a darker colour.
Here I have chakka undas without any jaggery added. One fully ripe Jackfruit, lowered with rope from the tree is used for this virgin process.
These sixty undas will go into storage and will not be accessed before some 8 months from now. The best taste of the balls start from then and the undas last two years.
