My lunch, when I was with Standard Chartered Bank in HongKong, had been Chicken Curry Rice from the small Vietnamese outlet on the second floor food court in Citiplaza where my office was on the 16th floor.
I have here the chicken curry, Vietnamese style, made with the help of recipes on the net.
I have boneless chicken, cut into pieces. Add some oil to the cooking pan and dice some sliced onion. When the onion is brown add the chicken pieces and stir for a while.
Add peeled and cut potatoes, carrots, lemon grass pods sliced lengthwise, curry powder, coconut milk and chicken broth and allow the mix to cook well.
When the chicken and potatoes become tender, add a couple of tablespoons of fish oil. You can add a tablespoon of sugar if you want.
Simmer for a short while and serve hot with rice.
