
JUST SOMETHING WITH EXTRA FRUITS
Shelf life of fruits is short and throwing them off is not in my grain.
How to preserve them, the healthy way is a challenge. Preservatives are best avoided.
Here’s what I have done with Pappaya. The red one was yesterday and yellow from a ‘pink lady’ papaya, sometime back.
Mash the fruit and steam/ cook to jam consistency with some cardamom, cloves, cinnamon powder and ginger powder. Another key ingredient is lime juice.
No preservatives, no added sugar.
It stays good in refrigerator. I find it too good with Puttu. Also as jam with butter on toast.
